Yes, that's exactly what I'm saying - if the printers are network-compatible, you don't need an IoT box.
The EPSON printers should be relatively easy to integrate - for label printers, I can also highly recommend the Zebra models, as the ZPL format used is natively supported by Odoo.
However, depending on the Odoo version, in most cases a CUPS server is required for the communication of a label printer, which must be able to communicate with Odoo. In addition, a module for printing such as this one: https://github.com/OCA/report-print-send
