I've watched the tutorials and I believe I understand the overall process of making a Manufacturing order, checking for availability to reserve stock etc., but I'm not getting what the button "Plan" actually does. Could anyone help my understanding?

When you have operations, planning set the operations in status ready, and calculate the date and time for planned start and finish.
You can then change that with, and there is a calender chart with drag / drop function to do that.
