You can set those parameters in the header, that is common to all the default printouts.

You can find the header definition in: Settings > Companies > Companies. Find your company and look at the header/footer tab.

Unfortunately page format and size for default reports aren't as advanced as for report_webkit for instance, where you can select your layout (i.e A4, letter, etc) without having to know the perfect size.
