I'm using Odoo v18 SaaS Online. I performed an inventory on January 1, 2026, and I want to revalue it as of December 31, 2025, because I need an accounting valuation. Therefore, I want to change the cost of the items, but I don't see the option to revalue the stock; I only see the stock adjustment option. How can I proceed ?

In Odoo v18 SaaS, this is expected behavior.
An inventory adjustment only corrects quantities and always posts valuation on the adjustment date (Jan 1, 2026 in your case). It cannot be backdated or used to revalue stock as of Dec 31, 2025.
Stock revaluation is only possible via Accounting → Stock Valuation for products with Automated Valuation, but on SaaS it also cannot be backdated.
For an accounting valuation as of 31/12/2025, the correct approach is to post a manual journal entry dated 31/12/2025 (stock valuation provision). This is auditor-compliant and does not affect stock quantities or FIFO/AVCO layers.
