Are there any tools for analyzing the Odoo logs? It would be interesting to get a report based on different events / errors that have been recorded in the Odoo logs over time.

You can also restrict yout log level to error so you are manage your log more easily.
I currently have this set to debug_rpc on our production instance.
I have found some plugins for Munin that work with Odoo's logs. Gives you an idea at least how you can grep to extract information you need https://gist.github.com/dreispt/5d21790a0119d8648162
There are plenty of tools to monitor logs, nagios, shinken, munin, raven - sentry, just pick one.
We are using Munin to monitor server performance and pgbadger as a log analyzer for Postgres, but none of these tools can create relevant reports specifically for Odoo. It would need to understand what / how Odoo is logging. For example, how many bus exceptions happen, rpc average response time over a date range, or other data like that.
