To see the field "Allowed Companies", the user you are accessing OpenERP with must have the Users -> User -> Access Rights -> Usability -> Multi companies selected. Then, when managing any user you see this muti-values field.

(Being new and having no karma yet to answer another question, I post this forum entry to complete the answer after taking quite some time to understand myself)

To See the "Allowed companies" field, once you have checked the check box "Multi Companies" under the User configuration, you need to save it. 

After doing so refresh the page and go to the user to whom you have assigned "Multi Company feature", then click on EDIT and you would be able to see the field "Allowed Companies"
