About Pyratz Gourmet Sailing
Founded by Alisson De Monteclain and her partner, Max Philippe, Pyratz Gourmet Sailing was created with the vision of combining island exploration with gastronomy. Unlike other boat charter companies that take guests to restaurants, Pyratz offers a dining experience on board, including a four-course menu crafted from local ingredients. “We wanted guests to enjoy the entire experience on the boat, discovering the islands, their culture, and cuisine,” explains Alisson.
Alisson, who previously worked in wine and spirits importing, and Max, with a background in boat renovation and catering, brought together their expertise to create a unique charter business that emphasizes sustainability and elevated culinary experiences. Today, Pyratz operates with a team of over ten employees and continues to differentiate itself through personalized service, locally sourced gastronomy, and exclusive itineraries around St. Martin’s islands.

Operations Fragmented Before
Implementing Odoo
Before Odoo, Pyratz’s operational processes relied heavily on manual tracking and disconnected systems. Accounting was managed through Excel spreadsheets, while guest bookings and boutique sales used paper receipts.

This lack of integration created inefficiencies in bookkeeping, project tracking, and inventory management, especially as the company expanded its fleet and catering operations. Each new booking, expense, or sales record required redundant manual entry, leading to delays and potential errors.
The Route to an Integrated Operation with Odoo

Pyratz discovered Odoo through a recommendation from a colleague who was helping organize the business. Although the initial setup required a learning curve and self exploration, Alisson notes that the company officially began implementing Odoo in 2022, starting with Accounting, POS, Sign, and a few CRM features.
From Manual Work to Connected Processes
Accounting and Bank Reconciliation: Odoo’s Accounting app allowed Pyratz to replace manual spreadsheets with a system capable of bank reconciliation, expense tracking, and analytic reporting. Before Odoo, reconciliations and revenue sharing with boat owners required multiple people and extensive manual calculation. Now, the analytic account function enables direct tracking of shared revenues and expenses, saving time and reducing errors. “Now my bookkeeper or I can see the balance and what needs to be sent to the owner directly,” says Alisson.
- Digital Agreements with Sign: Using Odoo Sign, charter agreements are sent, signed, and recorded digitally. Previously, this process required separate software, manual data entry, and duplicative work in accounting. With Sign integrated into Odoo, guest information is automatically available when creating invoices, eliminating redundant entry and ensuring accurate records.
- CRM and Quotation Management: The CRM app supports the creation of quotations linked to bookings. This integration means that customer data flows seamlessly from initial inquiry to invoicing, reducing administrative burden and improving responsiveness.
- Production and Recipe Planning: Pyratz plans to adopt the Manufacturing (Shop Floor) app for its kitchen. By linking recipes to guest orders, the system can generate production requirements for ingredients, helping chefs prepare accurately for upcoming bookings. This application represents a step toward a fully connected operation where bookings, inventory, and production are synchronized.
Inventory and Stock Management: Currently, Pyratz is exploring Odoo Inventory to manage stock between its kitchen and multiple boats. The goal is to automatically generate kitchen orders based on bookings and track supplies across locations. This system promises to improve inventory traceability and reduce manual oversight.
Future Growth and Operational Plans for Pyratz Gourmet Sailing with Odoo


As Pyratz continues to grow, the company has recently added a new speedboat to its fleet and is preparing a larger catamaran for group events.
The expansion requires more robust operational processes, which Odoo supports by providing real-time visibility into bookings, inventory, and financial forecasts.
