This should not be related to Anglo-Saxon or Continental Accounting.
Since Odoo 17 there is a new option in the Accounting Settings:
The Automatic Accounting option is new (in Enterprise Edition).
- If you don’t select this, you will not be able to enable Automated Inventory Valuation in Product Categories.
- If you do select it, a list of default accounts is displayed and you can enable Automated Inventory Valuation in Product Categories.
In Community Edition there is a new user access group to enable Automatic Inventory Valuation:
If a user is added to this group, the Automatic Inventory Valuation option is available for Product Categories:

Hi,
In Odoo 18, once you enable Anglo-Saxon Accounting, the account stock properties (like stock input, output, and valuation accounts) are shown in the Product Category, not in a separate place.
To see them:
Turn on Developer Mode
Go to Inventory > Configuration > Product Categories
Open a category and scroll down -- you will see:
Stock Valuation Account
Stock Input Account
Stock Output Account
Stock Journal
Make sure the Inventory Valuation is set to Automated, or those fields will not appear.
