I have never used them before. I can easily manage states with buttons and functions, changing visibility and so on, without setting up a workflow system.
So, now, in version 8.0, is there any advantage in using it ?
(PS: I'm a developper more than everything else, that can explain if I miss something else here...)
I like to use it every once in a while to show to users where they are when there is a process. For example when a user wants to send e-mails out to customers I'll add a workflow on top with 'Not Sent' > 'Sent'. Its visually handy but its not the most used tool in Odoo.
This is just an idea how one can use workflow,I didn't check that yet. I think one can use workflow to send emails to specific users/roles when the status of a document changed from one state to another. This is very useful as an information & communication tool, for example one can use this in Project Management.
if this is not currently possible, then I think one can customize easily to add this functionality

To be honest, I've never seen this Graph view of workflows. I found it because you suggested it, and I thank you for that. I think you should convert your comment as an answer.
