When using the Proforma option, no reference number is written on the Proforma generated by Odoo.
Is there a way to add the quote number or sales order number on the proforma invoice ?

Of course it can easily be customized
A pro-forma does not generate accounting entries and thus does not get assigned a reference number. Only way to give it a number is to validate it.
If you are generating your invoices from a sale order, you can as well generate an advance invoice, confirm it and have a reference number rather. Those are the only options.
