Is it possible to set up a website to sell just a few products by selecting it from a drop-down list? Something like selling by a contact form.
And handle it as a request and use CRM to manage it?

No, this not possible in standard Odoo. You could develop your own form-based website for that, but probably it's not worth the effort. And the module CRM is, as the name tells, stands for customer relationship management, for handling sales you should use the sales module.
