Hi,

You can activate the developer mode and navigate to Settings -> Technical -> Sequences & Identifiers -> Sequence and search for Sales Order .

Open the record and you can make necessary changes here: 

You can change Prefix, Sequence Size, Next number(if needed) etc from here.
