We use serial numbers for final assemblies that are assigned in the first operation (based on a label that is scanned)
In the consecutive workstations/operations, we first want to scan the label again to identify the assembly to ensure the right product is processed. The serial number field is automatically prefilled however.
How can we enable a manual selection of main assembly serial number at the start of an operation( 2nd and 3rd operation)?

I solved it by adding search criteria based on serial numbers in the work order overview. This way, if you scan the barcode of the serial number, the correct MO/WO is shown. This way it's prevented that you accidentally start a work order for the wrong serial number.
You can rely on the traceability that Odoo provides.
Or if you want to stick with the end unit serial numbers as traceaibility you would have to create a custom solution based on the product traceability/ serials and operation types.
In your BOM you could create 2 operations to reflect your current process of 1. recording all s/n for MO qty and 2nd the assembly operation itself
