Using the generic CoA I only have the option to use as default currency either EUR or USD.
How would I use a different default currency?

they have left most of the currencies as inactive - go to accounting | settings and activate the currency you need
Sorry, not so clear. You will need to have the accounting module installed (if you are not installing you could use pgadmin to make change direct in your database - table is res_currency). Then on the accounting menu configuration | Currencies
