Is it possible to leave one unit left so it will not be possible to sell the last part of a product in the e-commerce website?
Basically I want one item left = show out of stock.

This can be done with stock locations. If you have the item in two stock locations and only allow one location to be available on the website it should show as out of stock.
Not sure if you have looked at reorder rules. With that you can automate Odoo to order more items as soon as their level goes below a set amount. (Min / Max rules.)
