I found email templates that I can configure under:
Settings -> Technical -> Email -> Templates.
but there is no template for emails that comes from chatter. Where I can find that templates to adjust them to my needs?

It may be too late. For me, i edit file addons/mail/static/src/xml/thread.xml .
You can see mail.ChatThread.Message in this file
