under manufacturing -> bill of materials -> click any subassembly I want eliminate the fields that say "valid from" and "valid too" and create a field that will give current quantity both actual and virtual (just like it does under products). Is that possible?

Yes it's possible but you have to develop your own module to do this, you can do it through interface but it's not the best option.
