Has anyone found any good documentation for the new Lot/Serial Properties added in v17? I don't see anything regarding those in the official documentation.

A tad late to the party, and maybe not the answer you're looking for.
But there is this documentation about properties on lot/serial for version v18.

The documentation is helpful and glad to see Odoo got that posted finally.
I don't think I personally will implement properties fields though. Looking into them further, they seem to be all lumped into 1 JSONB column, and cannot be used for import/export/api activities. So they are not very extensible.
