This behavior usually happens when Odoo is unable to match the incoming WhatsApp number with an existing contact record. In that case, Odoo displays the WhatsApp profile name and phone number received from WhatsApp.
Please check:
• Whether the contact phone numbers in Odoo are saved in a consistent format (preferably with country code).
• Whether duplicate contacts exist with the same number.
• Whether the WhatsApp integration is correctly linked to existing contacts.
Once Odoo recognizes the number correctly, it should associate messages with the saved contact name instead of the WhatsApp display name.

I recently uploaded the WhatsApp contacts in Odoo and placed all the numbers with the country prefix (in this case Argentina +54)
can you provide pictures?
Otherwise, with this infomration I can only suggest running a server action to apply the whatsapp user name into the contact field name.

For Argentina specifically, it is worth checking whether WhatsApp is sending numbers with additional digits (such as mobile prefixes like "9" or formatting differences) while Odoo stores them differently. Even a small mismatch can prevent Odoo from linking the incoming message to the existing contact.
I would also suggest checking:
• Whether the number in Odoo exactly matches the number received from WhatsApp
• If duplicate contacts exist
• Whether the contacts were imported into the Phone or Mobile field consistently
If the numbers match exactly and the issue still persists, it could require reviewing the WhatsApp connector behavior or mapping configuration.
