can it be that the timesheet app (the one you can also install on mobile devices) in the web back-office itself is removed in Odoo15?

Yes, you're spot on — in Odoo 15, the separate "Timesheet App" menu entry (the mobile-style preview/interface that was available directly in the backend web client in Odoo 14) has been removed. It's now fully integrated into the standard Timesheets module, with no dedicated mobile preview option in the web backend anymore.
The native Android/iOS apps still handle mobile entry independently, and the core web timesheet features (grid, list, etc.) remain available for desktop use.

It is enterprise, that was before. But I mean the Android and IOS app you can install on your mobile was in Odoo14 also made visible in the web browser as a kind of preview how it looks, but you could use it as if you were working on your mobile.

In Entrerprise edition of Odoo it looks like this now:

In Odoo14 it was called Timesheet App (Timesheets - Timesheet - Timesheet App)
Now in O15 the menu is no longer there: Timesheets - Timesheet"s"
(Note the "s" in the submenu now in O15)
