How to get acces of an historical value of our stock ? For example, is it possible to know the value of our stock on the 31st of December when we will be on th 6th of January ? Or the only way is to take a picture of the value after POS closing on the 31st of December ?

Yes it's possible
simply go to Inventory -> reporting -> Valuation and then select the date from "Valuation Date"

I can only choose "Stock", "Moves History" and "Performance" on the sub-menu. And I have full Administrator access by the way...
Do we use the same version of Odoo or I missed something ?
Can you tell me your odoo version and if it's Enterprise or community?
