How to change email defaults FROM for "Send a message" or "Log note"

Question

Hi all,
I am using Odoo 15 and enterprise.
When sending an email in "log note" or "send message", from will automatically get the sender. Thus, if the company has 15 people, it will automatically become From 15 different people. Please tell me how to change the default to
From: Vndraft Pty Ltd

Another way could be create an email template with From address populated and train users to use that template while wanting to reply from common email box. This would provide the flexibility to use user email or common email.
