can i simply add the ingredients to purchase or to inventery, selecting the supplier who sells the desired product without going through the bidding process. The delivery will be pending until it is added, ensuring that it is accounted for and a purchase order is generated for the supplier.

Can I include the purchase cost along with the transportation fees to get the final cost?

You do not need a bidding process. Just confirm the purchase order so a goods receipt (delivery) is created in inventory app. You do not even need to send it to the vendor.
