When sending an email from ODOO it does not arrive with the user who sends it.
Example:
My user is sistemas@elitumgroup.com
When sending the mail it arrives with the configured server mail.

Would you know if the emails are composed and sent by users using "Email templates"? Likely the 'from' address has been configured on the template with the server email
Settings > Technical > Email Templates > Email Configuration (tab)
No, to send email from example contacts.
Please do share more information on your set-up.. hosting, version, email configuration etc
