When translating my Odoo website into other languages it can sometimes be hard to read in the default fonts and sizes. In cases such as Hebrew or other languages that use special characters, is it feasible to set fonts specific for that language that might be easier for users to read?

Yes text style can be modified for translated websites. To do so, activate the developer mode and go to 'Settings > Translations > Translated Terms' in the backend. Then look after the term to modify. The style is part of the translatable term so you can easily change it (e.g. change font size: https://drive.google.com/a/odoo.com/file/d/1dArGFJ-Dw4E90JwRlalLX50EfymTq-cx/view?usp=drivesdk).
