Every time I make changes to a product, such as variants, for example, this product disappears from the list of products available at my point of sale.
Is this normal?

Hi,
This behavior in Odoo POS is expected under several conditions and mostly configuration-related.
1) Ensure “Available in POS” is enabled in the product.
2) Inside Product → POS Category, ensure at least one POS category is set and ensure that category is enabled and visible in the POS configuration.
3) POS aggressively caches product data. So, Close the POS session and Reload POS
4) If you have done any custom work around in POS,please recheck it.

Can you explain what changes you make?
Adding attributes will archive the variants and create new ones.
As Chris wrote - please be more specific. What do you do (what do you change? can you post screenshot?)? Giving us steps to reproduce your issue, will help us to give you specific answer.
For now, with given data answer for "Is this normal?" is - no, it is not normal :)
