I want to do something similar where I want to insert a table in the Employee app. I want an overview of action changes for a particular employee with various fields that can be manually entered in a list. Chatter does keep trackbut the below is what I would like.

You have not specified the type of table you require. If you need a table similar to a list view in Odoo, you can create one using a relational field with widgets such as 'section_and_note_one2many'.
