Can the mail template or wordings be changed while sharing emails for leave requests or approvals?

Hi,
You can edit and design the email templates as per the need. If you are looking to edit the existing email templates you can edit it either from the front end or from the back-end.
If you are doing from the front end activate the developer mode and navigate to Settings -> Technical -> Email -> Templates, from here you can open the respective email template and edit it accordingly.
