I can set it to true using the developer mode but the false option is missing.
How can I set on the products forms the value "Can be Sold" false as default?

You can do this:
- Create the default value. From the product form, debug / set default. No matters if the value is "true", and you want "false".
- Menú settings / technical / actions / User defined defaults. Change the default value field to "false"
