Set up Payment Methods for Currencies:

• Go to Point of Sale > Configuration > Payment Methods.
• Create separate payment methods for each currency, such as one for USD and another for EUR.
• Set the corresponding currency for each payment method

Assign Accounts to Payment Methods > each payment method, assign different accounts in the "Receivable Account" field 

Like > USD Payment Method → USD Receivable Account, EUR Payment Method → EUR Receivable Account

Last, On POS > When processing payments in the POS, select the appropriate payment method based on the currency
