First I created the product with the cost, internal reference, bar code. but when I add variants this information get erased.

That is out of the box behaviour for Odoo. If you are creating variants, you have to update them on the variant level. Not on the product template.

The reason is each variant will have its own internal reference, barcode reference.

My suggestion is create the variants first then update the other information.
