Let me clarify that it isn't updated unless you change, right? However, if you make some changes, the update is automatically saved.

The difficult thing is that Odoo tries to be helpful and guess this info based on the incoming email, etc. So our users don't notice when Odoo makes these guesses, and then our contact database becomes corrupt.
Disable auto data enrichment/duplicate detection or any third-party sync that’s populating contact fields automatically.
Also set phone/email fields to not update if blank via business rules or field-level mappings to prevent CRM “guessing” values.
@jenniferwilliams can you expand? Do you know some of the names for the automated and/or server actions that are firing these things?
