I am using the restaurante app in v10.0
I would like to prohibit POS users from viewing session information or closing and validating their POS session. Only a POS manager should be able to.
How can I achieve this?

You can give access rights for point of sale as user instead of manager.Sessions menu is not available for them.
to set access rights got to :
Settings -> Users -> Users -> Your_user -> access rights
