Hi,
Is possible to generate a maintenance request from an email? so the users can send an email with their issue and then Odoo creates the maintenance request automatically.

Yes, this is most definitely possible.
If you create an alias (settings->technical->alias).
aliased model = model you want to create.
this is an example to create a task linked to an existing project (id=6).
