Hy,

In v7, we were used to have a menus for showing ir.actions.wizard.

Have they disappears in v8? If so, what is the proper way to work?

ir.actions.wizard has been deprecated in 6.0 in favour of osv.osv_memory (which is now orm.TransientModel).  Here is a link to another question which answer provide a greater detail: https://www.odoo.com/forum/help-1/question/why-should-we-choose-osv-memory-or-wizard-interface-18677

There are still wizards in v8. Examples:

If you install the Accounting app, a wizard will appear to ask you the chart of account template you want to use.
If you install the Sales app, a wizard will ask you the currency of your company and tax rates.
Before you open the chart of account, a wizard will ask you if you want to filter according to certain criterias.

Hy, I understand but my question wasn't on the ir.actions.todo but on the ir.actions.wizard, does this model disappear, what was it's purpose? Was it related to TransientModel?
