Ideally, I would like to avoid creating a new contact in Contacts too early in the process.
This option is no longer available in Odoo 19 after an initiative to improve usability.
A Customer is needed if you want to email / message them (in prior versions we created them automatically on the first email).

Odoo expects an Opportunity to be a "real" sales deal, and a deal needs a Person or Company to talk to. Odoo’s logic is: if you don't want a Contact yet, keep it as a Lead. The moment you click Convert, Odoo thinks, "this is serious now" and insists on creating a Contact to keep your data organized.
